Here in the “Brunch Bunch,” we – Aurora, Sadie and Isabella – agree that breakfast really is the most important meal of the day. As avid egg enthusiasts, we were eager to try a brunch spot with the dish in its name. 

Con Huevos! is a locally-owned brunch hotspot offering fresh Mexican fare at multiple locations around Louisville. 

We visited their Frankfort Avenue location, anticipating a breakfast much more than standard eggs and toast. 

We arrived around 9 a.m. to avoid the Sunday morning brunch rush and were seated quickly, while others after us had to stand waiting for a table. 

Walking in, we immediately noticed the sunny atmosphere thanks to the bright yellow chairs and large windows that allowed sunlight to pour in. The place had a cozy feel, with comfy chairs and rustic brick walls painted white.  

For drinks, we started off with the cafe con leche ($6.50), a hot beverage containing espresso and steamed milk traditionally served in Mexico, along with a glass of freshly squeezed orange juice ($6.99).

We decided to order a variety of items to really get a sense of the food Con Huevos! had to offer. With Mexican classics like chilaquiles and enchiladas, fresh options like avocado toast and omelets, as well as many gluten-free and vegetarian items, there was a wide array to choose from. After mulling over the menu, we decided to get an order of Mexican sopes ($10.99), their signature huevos rancheros ($14.99) and the churro waffle ($10.99).

The drinks came out quickly, so we had time to sip them and chat before our food arrived.

The sopes came in an order of three and were a favorite among the group. The fried masa base had buttery, crispy edges, covered in a layer of refried beans, diced tomatoes and a drizzle of sour cream.

The signature of Con Huevos! — the huevos rancheros — came with runny eggs over corn tortillas, soaking in a delicious, spicy salsa. Though we shared the dish, the serving size is best for one person, simply due to the difficulty of passing around the plate. It is certainly worthy of its signature status and something we’d order again. 

Cinnamon sugar dusted the crunchy exterior of the churro waffle, reminiscent of the fried treat. Topped with fresh strawberries and banana slices, it also came with a syrupy dulce de lèche sauce that added an extra pop of sweetness. 

We thoroughly enjoyed our experience at Con Huevos! and will definitely return.
